Chicken a la King Recipe

Hola Amigos! Do you have a go to staple meal in your book for days  when you really don't know what to make for dinner? That last minute quick fix that will bring a smile to every member of your household? I do, and as much as I want to say Chocolate, the rest of my family has to eat too, so my go to meal is pasta. This is one of my favorite recipes, Chicken a la King! So easy to make but with flavors worth of a king's palate!

I used to reward myself with  a bowl of this pasta after passing those killer statistics exams at the U (back then I was so much into studying that I wouldn't gain a pound no matter what I ate, I miss those days, lol). The place was a tiny hole in the wall, an  Italian "trattoria" behind the main Campus, but the key for their success was the quality of ingredients! They were the best! I tried to replicate the recipe to the best of my abilites and memory serves! Enjoy

Chicken a la King


1 Pound Pasta
1 1/2 Pound of Chicken Tenders
1 TBSP Oil
1 Cup Wine
1 Pound of White Mushrooms, sliced
1 Roasted Bell Pepper or 4-6 oz of pimento, chopped
1/4 Pound Smoked Ham cubed
1 Cup Heavy Cream 
1/3 Cup Chicken Broth + 2 TBSPS
1TBSP Cornstach
1/2 Cup Sweet Peas
Parmesan Cheese for Garnish
When your Chicken is done browning set aside and when cool enough cut into cubes.
As soon as the mushrooms look tender
Bring the sauce to a boil, if the sauce is too thin for your taste,  dissolve 1 TBSP Cornstarch in to 2 TBSP Chicken Broth and incorporate this into the sauce and cook it for a 3 minutes until cornstarch is cooked through.

Listo!

Tell me this is not comforting after a long test, tough day at work or just when you want something special but easy to cook? I think it hits the spot!

Brings great memories every single time I have it!...I just wish it could be as often as back in the day!, lol

    1. Thank You Marlys! I can't believe your hubs is not a fan of pasta! lol..perhaps that's why you guys are so fit!..I'm guilty of also among other things, being a Past-aholic, but you could easily replace the pasta for rice or baked potatoes...the sauce it delish! Thank You for stopping by!
