You know me, I'm still yet to conquer my fear of baking sweets from scratch, the flour, the baking powder, the not over mixing, it's all a big headache for me and I tend to avoid those at any cost! But once in a while, with deep breaths and fire extinguisher at hand, I get enough courage to try something simple and safe.
Perhaps one day I'll do something more daring, for now, these muffins are just what I need.
Perhaps one day I'll do something more daring, for now, these muffins are just what I need.
I think I fell I little more comfortable because it was one of my mom's easy recipes, designs for her baking impaired daughter. If something was to go wrong on the first try, I could always call her and ask for help. I know you must be thinking how could I mess up muffins...believe me I Can!
They have a little extra healthy crunch with the Flax, but that's about it..I even put some glaze over because to my hubs it is not a muffin if it doesn't have glaze...that sounds more like a cupcake to me..but I'm here to please.
Thank goodness they came out perfect and I feel confident enough to share the recipe with you. If I can do it, You can too!
Thank You for your visit today! It's always a blessing when we have the chance to share our achievements with friends no matter how little they are. Keep in mind my friends, that everything tastes better with a Pinch of Love!

Yum these look really good. I think I will be making them as soon as I pick up some bananas and flax seed. I bet you're a great cook and the key is to not be intimidated. Sometimes things don't work out, but I bet a majority of the time they will.

Hi Al! Thank You so much for the cote of confidence. I'm letting go of my fears little by little and experimenting with baking from scratch, so far that's what it is, lol...sometimes It's a hit and sometimes I feel like yelling..It's Alive...It's Alive...run for your lives..LoL it's all good just part of the learning process, Hugs, Lizy
DeleteI love that they have both banana and oatmeal in them, makes it something I'd let my family have for breakfast. Too many muffins really are, in my estimation, more a dessert than a muffin.
ReplyDeleteHi Karen, without the glaze they are the perfect amount of sweetness with the banana and honey, but you know the hubs and his sweet tooth..he had to have the glaze, we all had them for breakfast with milk and coffee, they were good indeed, Thanks for stopping girl :)
DeleteYour Oatmeal Banana Muffins look so yummmmy!!! =)
ReplyDeleteYou did a wonderful job!! Pinning to save!
These are really healthy! When I see an item like flax seed in the store, I know I should probably be eating them, but how? It's nice to have them in a muffin recipe because, for me, muffins are easy to mix, pour, bake, and eat! Your pictures are fabulous - as always!
ReplyDeleteG'day Lizbeth! Your muffin look healthy and yum indeed, true!
ReplyDeleteWish I could come through the screen and try one of these right now too!
Cheers! Joanne

These sound so yummy! I can't wait to try this sometime. Hope this finds you well. Theresa @DearCreatives
ReplyDeleteYum. I wish I had flour so I could make these. I love oatmeal muffins and banana muffins so I think combining the two would be even better.
ReplyDeleteThese look really yummy! Thanks for sharing the recipe :).
ReplyDeleteHurrah for you and they do look delicious!
ReplyDeleteBanana and oatmeal is a winner in my book. These look great.
ReplyDeleteHi LIzy, these muffins look amazing and so healthy! I saw it on freedom fridays party. Julie at julieslifestyle.blogspot.com
ReplyDeleteHi Lizbeth. I'm stopping in from Let's Get Real today. I just had to check out your baking. These muffins look awesome. I would also probably remove the glaze, but these are pretty much real food approved which makes this momma happy. I always joke with my kids that muffins are an excuse to eat cake at any time of the day. The added flax seed adds so much nutrition and I bet a nice nutty flavor.
ReplyDeleteNot only are these muffins nice and hearty, they are also heart healthy! Thanks so much for sharing at Simple Supper Tuesday.
ReplyDeleteYUM! I love this recipe, thanks for sharing it!
ReplyDeleteBeth @ The First Year Blog

I prefer cooking to baking, so perhaps I need to get over my fear of the baking too. I seem to overbake everything.
ReplyDeleteThis looks yummy!
