Stuffed Chicken Medallions
Ingredients
4 Boneless Chicken Breast (about 2 lbs)
1 (16 oz) Bag Spinach
1 (16 oz) Container Ricotta Cheese
1 ( 1 oz) Italian Salad Seasoning Mix
1 (2 oz) or 8 slices Pancetta
1 TBSP Butter
3/4 Cup Cream
Parmesan Cheese,
Salt and Pepper to taste.
Directions: 
Heat oven at 350 degrees.
Using a sharp knife, open each of your boneless chicken breast until you get sort of a butterfly out of each one. Between 2 pieces of parchment paper, flatten then a little bit so it's easy for you to stuff them. Set aside.
In a large bowl combine your ricotta cheese, spinach and salad mix. 
Take a flattened chicken breast on to a flat surface,season with some salt and pepper and  place 2 slices of pancetta on it, place some of the cheese and spinach mix, roll it a little bit and using some wooden toothpick pinch the sides together so the stuffing stays in place. Repeat the process with the rest of the chicken breasts.
Place in a bake safe pan and bake covered  for about 30-40 minutes until the chicken is cooked. Remove the chicken from the baking pan and let it rest before cutting it in the shape of medallions. 

To make the sauce, use the pan chicken drippings left on the baking dish. Place them in a small sauce pan with butter and cream, season with salt and pepper to taste. Cook for a few minutes without letting it boil until it reduces. Remove from heat and sprinkle some Parmesan cheese on top of the sauce and serve on chicken medallions. Enjoy.

Prep Time: 10 minutes                          Cook Time: 30-40 minutes                    Serves: 4

Hola Amigos: These is the season for soups! When it's cold outside all you want is to feel warm all over and sometimes the only way to do that is with a good old fashioned soup.

Today I'm sharing with you an easy recipe for a very tasty bean soup on the crock pot that hits just the spot.

I'm using for this recipe the new chorizos by Johnsonville. They are less spicy than your traditional mexican chorizo, very affordable ( I got mine with a 2 for $5.00 deal) and since they are milder in flavor, the soup is also kid friendly.

This soup is good by itself, it has big chunks of chorizo and beans, very satisfying. Top it of with sour cream, some green onions and of course some crispy Bacon. Also,if you are like me, no soup is complete without it's side of white rice! I know, It's tradition in my country to have soup with rice, I guess it's like having hamburger with fries here in the US.

Bean and Chorizo Crock Pot Soup
Ingredients:
1 Cup Navy Beans
1 Cup Pinto Beans
or use 2 Cup bean combination of your choice
1 (14.5 Oz) Can Diced Tomatoes
1  Large Onion cut in quarters
2 Clove Garlic finely minced
1/4 Cup BBQ Sauce
4 Cups Vegetable broth 
1 (16 Oz) Package Johnsonville Chorizo
Salt, Pepper to taste
3 Slices of Bacon Crisp and Chopped
Sour Cream
Green Onions
Directions:
Rinse and soak your beans the night before. When ready to cook, drain soaking water and place beans in your crock pot with tomatoes, onion, garlic bbq sauce and broth. Add salt and pepper to taste and cook for 4-6 hours. Once is ready, scoop about 4 ladles full of beans and 1 or 2 chorizos. Put them in  a food processor and process until smooth. Add this mix to the contents of your crock pot to thicken the soup. mix. Serve with some sour cream, green onions and chopped crisp bacon. Enjoy.

Prep Time: Soaking the beans overnight               Cook Time 4 hours                       Serves 8

Hola Amigos! Glad to be here a the blog today sharing  with you my first "from scratch" muffins!
You know me, I'm still yet to conquer my fear of baking sweets from scratch, the flour, the baking powder, the not over mixing, it's all a big headache for me and I tend to avoid those at any cost! But once in a while, with deep breaths and fire extinguisher at hand, I get enough courage to try something simple and safe.

Perhaps one day I'll do something more daring, for now, these muffins are just what I need.

I think I fell I little more comfortable because it was one of my mom's  easy recipes, designs for her baking impaired daughter. If something was to go wrong on the first try, I could always call her and ask for help. I know you must be thinking how could I mess up muffins...believe me I Can!

They have  a little extra healthy crunch with the Flax, but that's about it..I even put some glaze over because to my hubs it is not a muffin if it doesn't have glaze...that sounds more like a cupcake to me..but I'm here to please.

Oatmeal Banana Muffins with Flax Seeds
Ingredients
3/4 Cup Oatmeal
3 Ripe Bananas, mashed
3/4 Cup Sugar
3 Eggs
3/4 Cup Butter or Margarine
1 tsp Salt
1/4 Cup Honey
2 Cups Flour
1 tsp Baking Powder
1 tsp Baking Soda
1/2 -1 TBSP Flax Seeds
Directions:
Heat Up oven at 375 F and prepare your muffin pan with light oil . In a large bowl cream sugar and butter. Add eggs and mashed bananas, mix and add honey. 
In a separate bowl combine dry ingredients and add them slowly to the wet ingredients mix. Mix only till ingredients are moist and integrated, in other words avoid over mixing it. Pour the mix on your prepared muffin pan and bake for 18-20 minutes until a toothpick in the middle comes out clean! Remove from oven, let them cool and enjoy. 
Note: Glaze is not necessary, but if you want the extra touch of sweetness like the hubs did, these are the ingredients and directions for the glaze.
Glaze
1 1/4 Cup Confectioner's Sugar
1/4 Cup Butter, melted
1 tsp Clear Vanilla extract
2 TBSP Hot Water
Blend sugar and butter well. Add vanilla, stir. Add hot water until is smooth.If you want a thinner glaze add a little more hot water.

Prep Time 5 minutes                                Cook time 18-20 minutes                 Serves 12 muffins

Happy Halloween and 1-2-3 Vamonos!

Hola Amigos! Happy Halloween to all! I hope this day is full of sweet candy, happy faces and smiles!
It has been a year since I started my journey into blogging and it has been one of the most challenging but rewarding experiences in my life!
I've met a lot of great people from all over the world. each one of them with their own stories told through their blog's posts in the case of my bloggy friends and through the emails and comments I received from my readers.

I can say with all confidence today I have a great group of friends thanks to this blog.

I have challenged myself trying to come up with new and creative ideas for you, sometimes I was successful and sometimes it was a total disaster, but that is life, we just pick up and we keep on going, right?

Today I want to thank all those who read my posts, those who took their time to leave a comment, those who tried my recipes and those of you who have become my friends!

I've  also realized that after writing for a year I need a little bit of a break to regroup my thoughts, get my energy back and come up with new recipes and easy crafts worthy of all of you! I'm really not ready to tackle Christmas yet, lol!
