Southwestern Steak Salad Recipe and Homemade Southwestern Dressing

Hola Amigos! Your friend here at Just Dip It In Chocolate is trying to get back in shape, the best way I possibly can and oh boy...it's challenging. I know I've sung this song before, but this time I'm sticking to my goal that by my birthday in Sept.  (please don't send any Ferraries now,...well if you must, LOL) or the Blog's 1'st blogveressary in October , whatever comes first, I've lost 20 pounds! Easy for some, very very hard for me for different reasons...but any who...
This is my first attempt of something "healthy" or somewhat healthy also keeping in theme with the 1 dish meal! I hope you enjoy it!
Southwestern Steak Salad
1 box 16 oz pasta
1 1/2 Pounds Top Sirloin Steak
1 can Southwestern beans (red beans, black, pinto, corn)
1 Small Red Bell Pepper, chopped
1 Small Green Bell Pepper, Chopped
1/4 Red Onion, Chopped
Half Pint of  Tomatoes Halved 

Cook your pasta according to the box directions or your personal taste. 
Grill your steak also to your liking (my hubs likes his steak on the "done" side), and cut into thin strips.
Drain your pasta, add and mix in  your chopped vegetables,  beans  and some of your Southwestern Dressing. 
Top it all of  with your steak. 
Listo, 

This amount of steak and pasta will serve 4 with some leftovers too!

Southwestern Dressing
8 Oz Plain Yogurt
1/2 Low fat Mayo
1 1/2 TBSP Low Fat Buttermilk
1 TBSP  Mustard
2 TBSP Orange juice
1 1/2 tsp Minced Garlic
1 tsp Chipotle Powder
1 tsp Minced Onions
1 tsp Dried Oregano
1 tsp Ground Cumin


Mix all these ingredients and you will get a very creamy, light and spicy dressing that goes well not only with your salad but vegetables as well.

I just loved it! It's so flavorful you really don't need  a whole lot to be satisfied.

I supposed you could make it even healthier with whole wheat pasta, but I'm not there yet, lol
You also appease your appetite  just by looking at this arrange of pretty colors and textures!

  2. Looks delicious!! I know how hard it is to lose. I just lost 7 pounds in the last month because I had to get a strapless bridesmaid dress to zip!! :)
