Chicken a la King Recipe

Hola Amigos! Do you have a go to staple meal in your book for days  when you really don't know what to make for dinner? That last minute quick fix that will bring a smile to every member of your household? I do, and as much as I want to say Chocolate, the rest of my family has to eat too, so my go to meal is pasta. This is one of my favorite recipes, Chicken a la King! So easy to make but with flavors worth of a king's palate!

I used to reward myself with  a bowl of this pasta after passing those killer statistics exams at the U (back then I was so much into studying that I wouldn't gain a pound no matter what I ate, I miss those days, lol). The place was a tiny hole in the wall, an  Italian "trattoria" behind the main Campus, but the key for their success was the quality of ingredients! They were the best! I tried to replicate the recipe to the best of my abilites and memory serves! Enjoy

Chicken a la King


1 Pound Pasta
1 1/2 Pound of Chicken Tenders
1 TBSP Oil
1 Cup Wine
1 Pound of White Mushrooms, sliced
1 Roasted Bell Pepper or 4-6 oz of pimento, chopped
1/4 Pound Smoked Ham cubed
1 Cup Heavy Cream 
1/3 Cup Chicken Broth + 2 TBSPS
1TBSP Cornstach
1/2 Cup Sweet Peas
Parmesan Cheese for Garnish
When your Chicken is done browning set aside and when cool enough cut into cubes.
As soon as the mushrooms look tender
Bring the sauce to a boil, if the sauce is too thin for your taste,  dissolve 1 TBSP Cornstarch in to 2 TBSP Chicken Broth and incorporate this into the sauce and cook it for a 3 minutes until cornstarch is cooked through.

Shrimp Egg Foo Young Recipe

Hola Amigos: I'm going International for lunch/dinner today and  bringing you a favorite take out of mine, Chinese Shrimp Foo Young!, this is a super easy recipe but full of flavor, so grab your chopsticks and let's get cooking!
Shrimp Egg Foo Young

8 Eggs
1 Pound Seasoned Cooked Shrimp*
1 (10 oz) Bag Bean Sprouts
1 Large Carrot shredded
1 Medium Onion Sliced Thin
1 1/2 Cup Chicken broth
2 TBSP cornstarch
2 TBSP cold water
1 Bunch Green Onion Chopped (divided)
1 (1 inch ) Ginger Root 
Soy Sauce
Pepper
5 TBSP oil 
* After I cook my shrimp I like to season them with a little bit of ginger, bean sauce and pepper. But this is just my preference.

In a shallow saucepan add 1 TBSP oil, when the oil is hot and ready, stir in the bean sprouts, carrot, and onions. Fry for a couple of minutes until tender. Drain if necessary any excess liquid. Set aside.

I prefer to mix my eggs and make my patties as I go, therefore I whisk 2 eggs per patty and add soy sauce and pepper to taste.
In a non stick pan heat up a tablespoon of oil, add the whisk eggs, on top, sprinkle  handful of the vegetable mix and as many shrimp as you want per patty. 
Cook about 3-4 minutes until the edges start to brown, curl a little and you could feel it easy moving at the bottom of the pan. Flip and cook another 3-4 minutes.
Repeat the process until you have used all your eggs and you have 4 patties.
They are ready to serve and garnish with some chopped green onions.

For the sauce 

In a sauce pan add the chicken broth, ginger, soy sauce and pepper to taste and the rest of your  chopped green onions, Bring to a boil. In  a separate bowl, mix cornstarch and water and add it to the boiling broth pot. Cook on medium-low heat until thickened and cornstarch is cooked.
If you have some shrimp left you can also add them to the sauce at this point. It is optional. 
Serve over the patties.

This was so easy to make for those nights you feel like having something different, easy and homemade.

It's also healthy and light with all those crisp veggies. We love ours  with white rice!

BBQ Chuck Roast Recipe

Hola Amigos! Today's dinner is brought to you by yours truly and Grill Master "The Hubs". As you all know by know, BBQ and Grilling is something my manly men like to do and I'm just left to prepare the marinade and rub, side dishes and to  be the "honey-would'ya-boy" Honey would ya get me a plate..Honey would ya get me some paper towels, Honey would ya get me a beer...well you get the idea.

This beef cut is my least favorite, perhaps because I don't like red meat too much and really dislike Roasts (or at least I haven't met one I liked yet). So The Hubs came with the idea of ..hey let's slow cook it...on the grill!!! and I went like...Sure!!!!Why not!...at least I'm out of the kitchen! and let me tell you folks...this is the only way for now on I'm cooking my roasts...technically is not a roast but oh boy...once you try this you won't be going back to that oven!
First of course we marinated and rubbed  the roast. Recipe follows:

BBQ Chuck Roast
Marinade and Rub
1 (5 pound) Chuck Roast
 Sea Salt (I used Hickory Smoked Sea Salt)

Pepper
Onion Powder
Garlic Olive Oil (I used Trader Joe's)
Rub your Chuck Roast on both sides with plenty sea salt, pepper and onion powder. Drizzle a bit of garlic olive oil on both sides as well and leave it in the refrigerator for at least 2 hours before grilling.
Grilling 
Once you take your roast from the marinade. Put it under indirect low heat and cook this way for 2 hours or until internal temperature reaches 145-155F.  We cooked it at 275-300F covered. 
On the last 30 minutes of cooking we used or favorite BBQ Sauce and just brushed it on the roast until it caramelized and got sticky! Yumm! 
Listo.

Most of all  the fat dripped out of the meat just leaving enough on it to give it flavor.

It was very tender as well due to the slow cooking method, pretty  much falling off the bone.

Serve it with a grilled potato and enjoy your dinner!

DIY Twine Wrapped Toilet Paper Refrigerator Magnets

Hola Amigos! I should change the title of this post to "What was I Thinking" and you'll find out" Why" at the end of the post! But before getting any further I would like to mention another awesome blogger and all around person that has been with me for these last 6 months. Her name +Cynthia Landrie , the name behind Feeding Big. You can find so many wonderful things at her blog, for instance, awesome bloggy  parties like her In and Out of the Kitchen Linky Party, where you can link not only your recipes, but crafts, tutorials and DIY projects. She also has great tips on budget frugal living like her series on Living Big on Less Money and the girl is crafty too, just check these out, (secretly my inspiration for my project) . Cynthia was the person who gave me the push and confidence I needed as she trusted me enough to write an article for her amazing series Around the World in 80 Sundays, that was 3 months ago! wow!...Cynthia is a lovely person and if you get a chance, stop by her blog and say hi from me. I hope she likes what her creativity inspired here.

I have only one side visible and that I can actually use on my refrigerator mainly due to it's position in my kitchen . It's stainless steel so only the sides are magnetic. I don't put a lot of things on my fridge, I don't have that much room, I don't like the look of a million things there and lastly I can't find non breakable magnets pretty and big enough to hold the few things I want to put there, school calendars, once in a while greeting cards or an important " I don't want to forget coupon". So I decided to make them myself.

A few rolls of toilet paper, twine (natural and colored), magnets,  some bling to enhance the rolls and some flowers bring these pretty and useful magnets to life!

What I really like is not only that they are pretty but they work! I can actually use them to display heavy cards and they won't slide all the way down (or crash and break).

I thought that as with my turtles, these guys are perfect if you live in a small apartment and you want to bring some spring and summer blooms inside not having to worry about watering or bugs. You can also change the flowers according to the season.

We still have 2 more weeks left for little one the get out of Pre-K so I was thinking of making a few more for his teacher. She can even stand them just like that on her desk as an unbreakable flower vase or use it as I designed them to be, magnets.

Oh before I forget, I got inspired and made one looking like a little owl, feathers, beak, big googly eyes and all, I ran out of natural light so I set in on my side of the kitchen counter until the next morning so it could be photographed, and this is what I woke up to, yep... the cats ate the owl!!! What was I thinking right? leaving it there, sitting all pretty and totally forgetting about my little wild beasts prowling around at night under the shimmer of the kitchen nightlight hunting for their non canned or bagged , feathery dinner! RIP OWL...lol
On a side note, my floors are really shine, lol
