Hawaiian Hamburgers Recipe

Hola Amigos..or should I say Aloha! Now that grill master "Big Boy" is officially out of school , he is going to be doing a lot of grilling and BBQ-ing around the house. Today I'm sharing another one of his creations, this time with a little island twist. The key to achieve this Hawaiian influence is in the grilled pineapple and the pineapple sauce to complement it. Here is the recipe!

Hawaiian Hamburgers
1 1/2 Pound Ground Beef ( I like 85/15)
1TBSP Bean Sauce
1TBSP Soy Sauce
1/2 Tsp Garlic Powder
1/2 Tsp Curry Powder
1/2 Tsp Montreal Steak Seasoning
1/2 Tsp White Pepper
1/4 tsp Onion Powder
2TBSP chicken broth or water.
6-8 Strips Bacon
6-8 Buns
Mix all the ingredients above and make your hamburger patties.
Note: These measurements are approximate and reflect the taste of my family, you are welcome to use less or more of any and it  would not affect the outcome of your burger it will only taste the way you like it seasoned.
Wrap each hamburger with a strip of bacon.
Grilled them to taste.

Grilled Pineapples
6-8 Pineapple Slices
1 TBSP Honey
1 TBSP Lemon Juice
a Pinch of Tumeric
Put the pineapples in a zip lock bag with the above ingredients and let marinate for at least 30 minutes.
Oil the surface of your grill and place the pineapples until they get the grill marks, like 2-3 minutes on each side depending on the temp of your grill.

Hawaiian"Aloha" Sauce
3/4 Cup Pineapple Juice or Orange
2 TBSP Soy Sauce
1 Tsp Brown Sugar
1 Clove Garlic peeled and crushed
1/4 Tsp Black Pepper
1/2 dried Thyme
1 Tsp cornstarch dissolved in 1 TBSP pineapple juice.
Place all the ingredients in a saucepan and cook 8-10 minutes until reduced. Add the cornstarch dissolved  in the pineapple juice and cook until the sauce thickens. 

Now to assemble your burgers! Yeah, bun, burger, sauce and grilled pineapple, bun and EAT!!!

All the steps above, although seems like a lot of work, is well worth it! This burgers are really, really good! And I'm not just saying this. Little one fought to get a big one just for him and ate it all!

The Sauce goes like "butter" and you can use it on anything, from shrimp to chicken!

If you want to take your friends to an exotic paradise without packing your bags, this is the next best thing!

Beer and Chocolate Cupcakes Recipe

Hola Amigos! Happy Weekend to all of you especially to all the fathers this Sunday. Today I'm sharing with you the perfect dessert to serve dad on his special day, but also for summer BBQs , birthdays or gatherings with friends this grilling season! My beer and chocolate cupcakes for the beer lover in your house...never forgetting some chocolate for the lady behind the man!


I have tried this recipe several times  I found  it a while back  in a little insert that came with a specialty beer set I got my hubs a few Christmas ago, it's pretty straight forward and since then I've changed the taste of the cupcakes by using different flavored beers. This is my adaptation to the original recipe.

Beer and Chocolate Cupcakes

1 stick Butter, softened
1 1/4 Cup Brown Sugar
1/4 Cup Unsweetened Cocoa
2 Eggs
1/2  tsps Salt
1/2 tsps Baking Soda
1/2 tsps Baking Powder
1 Cup Flour
1/2 Cup Flavored Beer, I used Leinenkugel's Berry Weiss
1/2 Cup Water
1 tsps vanilla extract
Heat up your oven at 325 degrees and place liners on a 12 cupcake baking pan. Set aside.
Mix together butter, brown sugar and cocoa until everything is well integrated. Add eggs one at a time and mix everything at medium speed. 
In a separate bowl, whisk together the salt, baking soda, baking powder and flour until everything is well combined.
In another bowl mix beer, water and vanilla.
Now it's time add wet and dry ingredients to the chocolate batter. First liquid, followed by dry in an alternate way while mixing on medium speed. Repeat the procedure until all the ingredients are mixed.
Spoon this mix on the lined cupcakes  3/4  full. Bake for 18-20 minutes until a toothpick in the middle comes clean. 
Icing

1 Cup of Butter
2 TBSP Flavored Beer used above
2 Cups Powdered Sugar
2 TBSP Heavy Cream
1 Tsp Vanilla.
Beat this ingredients together until fluffy and ready to spread over cooled cupcakes.

Since I'm really bad at decorating, I found these delicious gummy "smoochies" and added a touch of whimsy to my cupcakes!

Aren't they a cute way of giving daddy a kiss?

You can really taste this particular beer on the cupcakes and the icing...in fact it intensifies the chocolate flavor! Yummm!

Depression Coconut Cake Recipe

Hola Amigos! Last week I saw tons of these cakes done on Pinterest, Lemon, Apple-Raisin and Spiced to name a few. Also the lovely +Dawn   at Spatulas on Parade has my favorite on her blog, Chocolate, check it out for some chocolate goodness. I've pinned them of course in case one of these days I would be brave enough to bake a cake from scratch...well little did I know the time came sooner than I thought out of desperation (Oh No! there's nothing sweet to have coffee with), laziness (I don't feel like going to the store)  and well....the prospect of being "depressed" if I didn't have my sweet fix for my afternoon coffee ritual.
I check through a few recipes and came out with my own version of this popular cake.

Coconut Depression Cake
1 1/2 Cup Flour
3/4 cup packed Brown Sugar
1 Tsps Baking Soda
1 Tsps White Vinegar
1/2 Tsps Salt
1/2 Tsps Almond Extract
3/4 Cup Applesauce
1 Cup Coconut Milk
Pre-heat your oven at 350 degrees. In a large bowl combine flour, baking soda, sugar and salt. Make a crater like indentation in the middle and add vinegar, applesauce and almond almond extract. Mix well all the ingredients above. Pour batter into a prepared pan and bake for 30-35 minutes until a toothpick in the middle comes clean (you know the drill)
Set to Cool
For the Topping
4 oz Marshmallow Cream
2 oz Cream Cheese, softened
1/2 Melted Chocolate Candy
1/4 Cup Coconut Milk 
Toasted Coconut and your favorite Trail Mix ( enough to cover your cake with it)
Mix  the first 4 ingredients until a smooth and good enough consistency  to pour over your cooled cake. if it's too thick add more coconut milk. 
Top it all off with toasted coconut and trail mix (mine was tropical banana coconut raisin!)

 I like it! It is fast, fun and easy enough for a novice baker like me to make!

I can only imagine all the combinations you can make with this quick recipe.
I didn't add any oil because the coconut milk has enough in it, for the spongy consistency I replaced with applesauce. Also unlike the traditional I used brown sugar. It was just sweet enough to complement the gooey and crunchy topping.

Oh and in case you are asking why trail mix...well I didn't have any nuts use either...I think I needed to go grocery shopping soon, lol

Cherry Cola Smoothie Recipe

Cherry Cola Smoothie Recipe, Thirsty? want to take advantage of all those fresh strawberries on sale right now, give this delicious smoothie a try! Fresh cherries a bit of cola, ice cream...ohhh yumm!
Hola Amigos! and happy weekend. I recently discovered a new fruit. Yes it's still possible at this advance age to find new things and be completely fascinated by them, lol! I discovered "Cherries"!!! You are probably saying...Cherries??? what' s the big deal...well..if you grow up in  a country with no cherries and the only way you can have them is the overly sweet ones that come in the fruit cocktail can, or the sweeter than sugar Maraschino bottled ones or cherry ice cream with a few chunks of something cherry like...you really get a horrible tasting idea of this little fruit. But, the other day at the store I just couldn't resist the temptation of getting a huge bag of this brightly colored fruit. The price was right and my hubs was willing to eat them if I didn't like them.


Wow, I was blown away! they had texture, and they were not the soggy sweet mess I was used to! I'm hooked,  they taste almost like tiny plums or hard grapes..lol..I know, weird...anyway, since I'm hooked and on my second bag already, before they were all  gone I decided to try an experiment and It worked, I'm sharing it with you today.

Cherry Cola Smoothie
1 Cup of Cola, chilled
1 Container of Cherry Yogurt (6oz), frozen
1 Cup Pitted Cherries
1 Cup Vanilla Ice Cream
1/8 Tsps Vanilla Extract

Put all the ingredients in your blender and blend until everything is smooth!

Serves 4 (4oz cups)


It is delicious! An all in one sweet soda float, without the float! and if you want to make it even more decadent, go ahead and add more cherries and whipped cream!
Cherry Cola Smoothie Recipe, want a different and refreshing way to enjoy your fresh picked cherries, give this smoothie a try! A bit of cola and ice cream...so good!
