I had a bottle of wine taking space in my pantry and decided to put it to good use! Why not a no fail combination...mushrooms and wine! it doesn't get any better than that for my taste buds.
Here is the recipe.
Baby Bella Mushroom Meatballs in Merlot Sauce
For the Meatballs
1 pound Ground Beef
1 egg, beaten
Salt, Pepper, Garlic Powder to taste
1 Tablespoon of Worcestershire sauce
1/3 Cup Merlot Wine
1 TBSP oil
Heat Oven at 350.
Combine all these ingredients and make make your meatballs. Heat up the oil in a saucepan and brown them evenly on all sides. Set Aside.
Deglaze your saucepan with some extra wine.
For the Sauce.
1 TBSP Butter
1 small onion chopped
1 pd Baby Bella Mushrooms chopped
1 TSPS Hot Sauce
1 cup Merlot or any other red wine you have
1/4 Cup Mascarpone Cheese
Half Pint Heavy Whipping Cream
Pinch of Salt and Pepper
In the previously deglazed pan, melt the butter. Once melted add onions, mushrooms, saute for 3-4 minutes until mushrooms reduce in size and onion gets getting transparent. Add Hot sauce, and wine. Bring to a boil and reduce heat. Add Mascarpone Cheese Whipping Cream, Salt and Pepper. Add the Meatballs you had set aside, mix and put in the oven save dish, covered for 30-35 minutes until meatballs are cooked.
Listo,
Serve over your favorite pasta.
I really don't know what I enjoy the most about these meatballs, the wine in them, the wine in the sauce or let's face it, the wine!, lol
