Coney Island Chili Dog Fall Recipe

Coney Island Chili Dog Crock Pot Recipe, Its Tailgating time folks! Enjoy your favorite game with this classic. This delicious sauce it's cooked in a crock pot bringing all the tastes together and more time for you to enjoy the game!
Hola Amigos! Is your family a sport junkie family? Do you Tailgate? Do you gather around your big screen with friends to watch the Sunday games? This is the season for that and for sport related snacks. This is a very simple post about a humble food, the Coney  Dog! I live in a state where Coney Dogs and Hockey are taken very seriously! To the point that two restaurants, side by side of each other claim to have the best Coney Dogs in Detroit. Lafayette Coney Island and American Coney Island, I'm sure you have seen this well known "friendly fight" on shows like Food Wars and Man vs Food, but since neither of these TV shows or restaurants are sponsoring my post I would leave it there and move on to the recipe.

This here is my (not Mi)  version of a Coney Dog (chili dog). It has very little in common with what you will probably get a  Coney Restaurant, but that is the point of this post. Take a classic, make it the way  your family likes it and Own It!...soon you won't be eating out at all, more money for that game trip to the baseball field, football stadium or hockey arena.

This recipe is cooked on a crock pot to make it even easier! I really love my crock pot, makes everything so easy and since it's cooked over time and low heat everything melts giving it the typical chili consistency to the recipe.No big chunks here.

Use the hot dog of your liking. We like to hear the "Snap"! so we get the ones with natural casing, 100% beef at our local butcher shop ( I live in a small town )

It's still looks like an original Coney...with onions and mustard, but the chili and sauce is what makes the difference.

We were having an almost summer like weather here,  all of the sudden BUM! Fall!!! It went from 81 to 60 overnight!!! So guess what we are having for dinner?

My Coney Dog Fall Recipe
Ingredients:
1 Pound Ground Pork
1 Pound Sausage
1/4 Pound Chorizo
1 Can (20oz) Diced Fire Roasted Tomatoes
1 Can (15 oz) Black Beans
1 Can (15 oz) Pinto  Beans
1 Can (15 oz)  Red Beans
1 Can (15.25 oz)  Sweet Corn
Chili Powder, Onion Powder, Garlic Powder, Red Pepper Flakes, Salt and Pepper to taste.
Your favorite Hot Dogs and Hot Dog Buns
Directions:
Put meats, tomatoes, beans and spices in a crock pot. Depending on how much time you have available, cook for 4-6 hours. 30 minutes before time is up, add your corn.
Serve hot on top hot dogs with onions and mustard if you prefer. or top them with my Chipotle Ranch Sauce
Chipotle Ranch Sauce
1 Cup Ranch Dressing
1/2 Cup Sour Cream
1/2 Can (7 oz)  Chipotle Peppers in Adobo Sauce
Mix all the ingredients above and refrigerate until ready to serve over Coney Dogs (chili) 

Prep Time 5 minutes                Cook Time 4-6 hours                           Serves 5 Cups

Orzo and Chicken Autumn Skillet Meal Recipe

Hola Amigos! We had an unusually warm day for this time in the year up here. But still, it was one of those days that some comfort food was in order. I went to the store to get me some chicken and thought about trying the new chicken helpers on the market, just to make a quick meal but I couldn't Something about sweet and sour chicken coming out of a box doesn't sound too appealing to me, no matter how easy it looks.
I tell you guys, best decision ever! For about the same price I made this delicious and easy 1 skillet meal.
Maybe lady luck was on my side because all the mayor components were on sale! The rest we all have in our pantries.

A homemade meal to feed 4 for about $5 (well not counting the caramel apple candy corn and diet pop I got)!

This is your ideal Fall and Winter meal, easy, warm and comforting! In my book it doesn't get any better than that. Dinner is done in no time leaving plenty of time to enjoy the crisp weather and sunsets outside with the family.

Orzo and Chicken Autumn Skillet Meal
Ingredients:
1 Pd Chicken Tenders (was on sale)
1 Pd Baby Spinach (was on sale for $1)
1 Small can Mushrooms slices (was on sale for $.89)
1 Large Onion, sliced
1 Clove Garlic, minced
2 Cup Chicken Broth
1/3 Cup Orzo (was on sale for $1)
1 Tbsp oil for browning
Directions:
Season your chicken as you usually do with salt and pepper. I add a pinch of celery salt to mine all the time.
In a large skillet add the oil. Let it get hot and add your onion and garlic clove. Cook until your onions are transparent, always keeping an eye on your garlic not to burn. Add the chicken and brown. Add spinach, mix in with the chicken. Add orzo, mushrooms and broth. Cook for the time indicated on the box. I cooked mine 12 minutes. We really don't like our pasta quite al dente, neither mushy so that time was good for me. If you like it more al dente by all means cook it for only 8 minutes which is the box recommended time.
Let it sit for a couple of minutes for the pasta to absorb the sauce and serve with Parmesan cheese and bread. Enjoy

Lizard Tongues Halloween Stuffed Sweet Peppers Recipe

Lizard Tongues Halloween Stuffed Sweet Peppers, If you love peppers you will love this recipe. These sweet little "Tongues" could be stuffed with just veggies or some buffalo chicken too but they all get a mandatory dip on Snail Slime Dipping Sauce!
Hola Amigos! Happy October! Are you ready to get your Spook On? I'm so excited! I love this time of the year and most of all Halloween!
Today I'm serving some Lizard Tongues I stuffed with some wild mushrooms, garlic bread crumbs and Baby Swiss cheese among other ingredients, and I'm dipping them in some delicious Snail Slime dipping sauce! oh yummm!

You can make these guys just  vegetarian or like I always do make a batch with meat for the carnivores in your family.

I have to admit these peppers are a little tricky to stuff than their bigger bell pepper cousins, but it was all worth it! I ate the entire first batch by myself with the "I'm just trying them for flavor" excuse! I just love the Snail Slime!

Lizard Tongues Halloween Stuffed Peppers
Ingredients:
1 Bag  Mini Sweet Peppers (16 oz)
1/2 Cup Garlic Bread Crumbs ( I processes some Croutons)
6 oz Wild Mushrooms Mix (or Portobella)
1/8 Cup Baby Swiss cheese (shredded)
1 Tsp each onion powder, garlic powder, seasoned salt, lemon pepper
For carnivores:
1/4 Cup Buffalo Chicken Breast from the Deli, processed in a food processor or blender.
Snail Slime:
1/2 Cup Sour Cream
3 TBSP Salsa Verde and 1 extra to put on top.
Directions:
Wash your peppers thoroughly and dry. Cut the tops and very carefully scoop the seeds. Set aside.
In a heavy saucepan heat up 3 cups of water until it boils. Once in boils put your peppers in  for a couple of minutes, about 4-5. Remove from heat and hot water and put them in a separate container full of ice water. This will stop the cooking process.
Heat up your oven at 325.
When your peppers are cool to the touch, stuff each one very carefully with your mix.
One they are all stuffed, lay them flat on a cookie sheet lined with parchment paper and bake for 12-15 minutes or until the stuffing on top gets golden brown.
Once they are done. Remove from the oven and serve with the Snail Slime Sauce. Enjoy!

Prep Time: 5 minutes                           Baking time 12-15 minutes                        Serves 24
