Combination Stir Fry with BBQ Peanut Sauce Recipe, this is the perfect use for leftover veggies or any meat, chicken or seafood you have in your fridge. Delicious and Quick but better than take out anytime! #stirfry
Hola Amigos! I guess at this moment we are clearing the fridge to make room for our 18 pounder bird and pies and everything we can possible prepare ahead of time. But what to eat before Turkey Day  arrives? well, just check among the "forgotten" items while making that needed space, put them all together and make a delicious stir fry.

This dish came about  because in one of my shopping trips I noticed this perfectly delicious 16 oz of stir fry mix for only $1.69!!! that is a bargain! Most of the time I stick to my rule of buying each veggie by itself because it's usually cheaper, but this one was a no-brainer, just the broccoli alone was $1.99 per head and I just needed a few tops and stems. Same with everything else.

In my fridge I found 1 lonely chicken breast, left from a package of 5, a handful of shrimp and 2 thin cut boneless pork chops, I already had a supply of sauces and condiments from previous visits to take outs ( I know laugh, but they come in handy sometimes) and who doesn't have peanut butter in the pantry?

After a 30 minutes you end up with a flavorful stir fry for almost nothing! You have used some of your leftovers without repeating a meal and creating something worth of the best take out place in town!
The peanuts were an impulse buy at the dollar store, saw a bag of BBQ peanuts and bought 2 for $1 never knowing what I was going to use them for...perfect crunchy element for my stir fry!


Do you check the "manager's special" at your local grocery store? How often do you buy or do you just pass them? I'm  thinking of doing this more often if the value and quality are there and try to create something good for almost nothing.

Combination Stir Fry with BBQ Peanut Sauce
Ingredients
1 1/2 tsp Sesame Oil
1 Chicken Breast, strips
2 Boneless thin cut pork chops, strips
1/2 lb Cooked Shrimp or use any meat you have handy
1 (16 oz) package Stir Fry Mix

1/2 Cup Onion, chopped
2 Cloves Garlic, minced
1 inch piece Ginger, ground
3 TBSP Peanut Butter
1 TBSP Soy Sauce
1 TBSP Hoisin Sauce
Thai Spice or Pepper Flakes to taste
1/4 Cup BBQ peanuts, chopped
Noodles or Rice to serve with your Stir Fry
Directions:
In a skillet heat up the  1 TBSP sesame oil and fry your chicken strips and pork chop strips until cooked. Set aside. Coat the skillet with the remaining 1/2 tsp of sesame oil add onions, garlic and saute until for 3 minutes. Keep moving constantly not to burn the garlic. Add the Stir fry mix, chicken and pork chop strips. Mix until everything is well combined about 2 minutes, finally add the shrimp. Remove from heat. 
In a separate small sauce pan, on low heat,  mix peanut butter, soy and hoisin sauce until everything is smooth, add Thai Spice Mix or pepper flakes to taste. 
Pour this sauce over stir fry mix coating everything and serve your creation on top of rice noodles or white rice. Enjoy!

Prep Time 10 minutes                            Cook Time 20 minutes                       Serves 4-6

Chicken in Mustard and Capers Cream Sauce, this shredded chicken sandwich will become one of your favorites! Not only you get to use left over chicken but it's creamy sauce makes the appealing to young and old1
Hola Amigos! This one is an after school snack for little ones! Mine loves chicken, everything creamy and sandwiches on soft flaky bread are among his best friends. Put it all together and you have a happy kid and a mom with enough time to plan for dinner without stress.

Super easy recipe, could be done with leftover rotisserie chicken or with the lonely chicken breast left on the package after you have cooked that big meal ( for some crazy reason I always have 1 seasoned piece of chicken left from the family package).

If you don't have any croissants available, no problem I used them because they were out of our favorite Honey Buttermilk Biscuits at the store. My little one is crazy about them and this chicken goes great with them.
Chicken in Mustard and Capers Cream Sauce, this is the creamiest chicken sandwich you have ever had! With a bit of Mediterranean flavor, it could be made with leftover chicken and if this is the case lunch or dinner will be made in less than 30 minutes. How about that for a great chicken sandwich!

And last but not least if you are wondering what role the capers play, well they are that little note of saltiness and tangy flavor on the creamy sauce, just like olives. Who would have thought a 5 year old would do the happy dance every time he bites into one? he picks the mushrooms out of his pizza, but loves capers, go figure.

This is one of my favorite recipes for using leftover chicken since I'm all about using everything and on of my guys's favorite for lunch or light dinner! Everybody happy. Hope you are too when you try it at your home. Remember  my friends,everything tastes better with a Pinch Of Love!

Chicken in Mustard and Capers Creamy Sauce
Ingredients:
2 Cups Cooked Shredded Chicken
2 TBSP Butter
1 1/3 Cups Chicken Broth 
2/3 Cups Milk
1/4 Cup Dijon Mustard 
2 TBSP Flour
2 TBSP Capers
4 Croissants or 4 Honey Buttermilk Biscuits 
Directions:
In a Large Skillet under medium heat, melt butter and saute chicken until heated through. Right around 2-3 minutes.
Add chicken broth and cook on high until it reduces by half. Takes about 5 minutes.
In a small bowl whisk together milk, mustard and flour. Stir into the chicken mix. Cook and stir until everything comes to a boil . Stir in the capers, mix, remove from heat.  Scoop a good portion on your toasted croissants or biscuits and enjoy!

Prep Time 5 Minutes                     Cook Time 15 minutes             Serves 4

Lunes de Chocolate-Chocolate Mondays

Hola Amigos! Glad to have you here today! I hope you had a beautiful Easter weekend with your family, with plenty of smiles, love and food.
Speaking of food...I really didn't feel like cooking today. I think the weekend got the best of me and after all the cooking, entertaining and a fridge full regular food and a few leftovers I really couldn't think about preparing anything else till tomorrow.

For how long do you keep your leftovers in the refrigerator? Do you even have leftovers? lol...and what is your favorite dish to create after a holiday weekend with delicious food?

This year I only had  ham which I will use for soup and pasta or since the kids are on spring break, maybe it will get eaten before I get to use it for any of that. Oh, and the other thing I had left was just a few sweets.

 I wish I had something brand new and spectacular to share with you, but I like to keep it real here in my blog and reality is I have no more room in my fridge to put anything else, I'm kind of tired after preparing Easter Brunch for my family and guests and it's Spring Break and I'm thinking on joining the kids and have some fun for a little while, lol.
