Drunken Chicken Recipe

Hola Amigos, Happy Thursday! another grilling recipe and hit from Grill Master Big Boy! The kid is on a roll lately...maybe he wants  a giant Luau Party  for his upcoming graduation. We'll see.
Today we sharing our Drunken "really over the legal limit" Grilled Chicken. Not only this chicken is cooked with Beer, but it has been on a White Wine Brine for more than 12 hours! Tell me she is not "WAsted" lol.

Drunken Over the Legal Limit Grilled Chicken
6 Pound Whole Chicken
1 Bottle of White Wine
1/4 Cup Soy Sauce
2 Chicken Bullions
1 Clove Garlic Chopped
3 TBSP Jalapano Mustard
1TBSP Onion Powder
Pepper to taste
Rub all your ingredients inside and out your chicken. In a big container and a bag let it sit and pour the bottle of white wine over it. Cover it up and once every couple of hour move it, turn it and shake it a little so every part of it gets to swim on the brine for a couple of hours.

Leave refrigerated for 4-12 hours.
Grillimg
Remove the chicken from the bag, let the brine run out of the chicken and with a good amount of oil, rub your favorite BBQ rub, or plain salt and pepper in and out of the bird.
When it's time to grill your chicken you could open your beer can, remove (drink) 1/4 of it's contents place  it in  the bottom  cavity of the chicken, let it sit on the can comfortably and cover it up, cooking it on indirect heat for 2 hours or when the thermometer reaches 180F on the thighs, 170 on the breast and liquids run clear.

Personally Grill Master ran into a bit of a difficulty because his grill wouldn't close..bummer, but fast thinking and ingenuity on the Master's side solved the problem, he put a Beer Reservoir Pan on the middle of the grill and lay the chicken flat as you would regularly grill it, as the Beer in the pan heats up it infuses the chicken with aroma and flavor  and keeps it moist at the same time! Brilliant!

Listo,
After 2 hours get ready to enjoy the moistest and tastiest chicken you've ever had!

It is really tasty!.
I wish I had more pictures but  the light was a big problem since it was fading quickly, but you can still appreciate how succulent it was

Thank You so much for visiting the blog today! I hope you consider  this delicious recipe for your future summer gatherings!

Fruity Frozen Sangria Recipe

Hola Amigos! We had a beautiful day yesterday..81 Degrees!!! I was doing a little dance all day! So excited since that is the perfect temperature for me!
We grilled some Drunken Chicken (recipe coming soon) and I made a fruity drink for me that took me all the way back to the 80's! Oh yeah...do you remember when Wine Coolers were "the Thing"? I find it  very hard to resist when I go to the grocery store to purchase these mini bottles available in every single color of the rainbow for just $1!!!..Not because I'm crazy for what's in it, but I just love the way the colors look.

I know there is no wine on modern  "coolers" but malt, still, I'm making a frozen sangria with one I bought. I like my fruity drinks sweet and where I can't taste the alcohol, since I don't drink...so if you are like me, you are going to love this recipe...besides you can have 1 for everyday of Summer since they are only $1 dollar and oh, so pretty looking!  Note that if you are a purist and love your real wine Sangria, all you have to do is replace the cooler for real red wine and have fun.  Here is the recipe

Wine Cooler  Fruity Frozen Sangria

1 bottle wine cooler chilled

1/2 Cup Guava Nectar chilled (you can use your favorite nectar)
1/2 Cup Frozen Strawberries
1/4 Cup Frozen Blackberries
1/4 Cup Mixed Fruit Cocktail

Put all ingredients in a blender and Frappe until smooth, serve and enjoy!
Serves 2 (or 1 if you are greedy, lol)
Listo
It is sweet and you can't taste the wine cooler, which I love!
On the other hand you keep having this all day...and you might start giggling sooner than you expect!

This drink is easy to make and perfect for hot days!

Thank You for visiting, I hope on your next visit to the grocery store you keep this recipe in mind and enjoy your personal Frozen Sangria a try!

Remember everything tastes better with a Pinch of Love and a  Pretty Cup!

Besitos,
Lizy

Baby Bella Mushroom Meatballs in Merlot Sauce Recipe

Hola Amigos! Do you have a dish you pretty much have to make every week to keep your family happy? Well we do here, usually Tuesdays or Wednesdays is Meatball Day! If you think about it, that is 52 different kind of meatballs I have to make in a year so I have to stay on the look out for new recipes and try new concoctions of my own.
I had a bottle of wine taking space in my pantry and decided to put it to good use! Why not a no fail combination...mushrooms and wine! it doesn't get any better than that for my taste buds.
Here is the recipe.
Baby Bella Mushroom Meatballs in Merlot Sauce

For the Meatballs
1 pound Ground Beef
1 egg, beaten
Salt, Pepper, Garlic Powder to taste
1 Tablespoon of Worcestershire sauce
1/3 Cup Merlot Wine
1 TBSP oil
Heat Oven at 350.
Combine all these ingredients and make make your meatballs. Heat up the oil in a saucepan and brown them evenly on all sides. Set Aside.
Deglaze your saucepan with some extra wine.

For the Sauce.
1 TBSP Butter
1 small onion chopped
1 pd Baby Bella Mushrooms chopped
1 TSPS Hot Sauce
1 cup Merlot or any other red wine you have
1/4 Cup Mascarpone Cheese
Half Pint Heavy Whipping Cream
Pinch of Salt and Pepper

In the previously deglazed pan, melt the butter. Once melted add onions, mushrooms, saute for 3-4 minutes until mushrooms reduce in size and onion gets getting transparent. Add Hot sauce, and wine. Bring to a boil and reduce heat. Add Mascarpone Cheese Whipping Cream, Salt and Pepper. Add the Meatballs you had set aside, mix  and put in the oven save dish, covered  for 30-35 minutes until meatballs are cooked.
Listo,
Serve over your favorite pasta.

I really don't know what I enjoy the most about these meatballs, the wine in them, the wine in the sauce or let's face it, the wine!, lol

Will love to hear about your favorite Meatball recipes, so leave me a link if you are a blogger or let me know in your comments how you spice up your traditional Meatball of the Week...I still have 32 more weeks to go!
