Easy Pierogi Turkey Casserole Recipe, nothing says comfort food better than Pierogi! Buttery potatoes, cheese, smoked turkey topped with sour cream to name a few components of this goodness! Dig in and enjoy!
Hola Amigos! I love easy meals for the weekend and I believe I have a good one for you here. This one will feed not only your family but friends and guest too. Perfect meal to take to a picnic, party or to bake 2 freeze 1 sort of deal.
Pierogi! They are a big thing here in Mi, since we are the 3rd state in the country with the largest ethnic Polish community! We love them! these delicious little potato dumplings are comfort food at its best. Filled with cheese, broccoli, mushrooms or cabbage, pierogi are a staple of traditional Polish Cuisine. Boiled them first, fried them in butter and top them of with sour cream, mushrooms or bacon they are a great meal.
My casserole has pretty much all these ingredients in a deconstructed way. I did a bit of research as I always do and most of the interpretations of this dish used lasagna noodles (which sometimes are a hassel to cook) or frozen Pierogi. Nothing wrong with this but I needed something a bit more savory and easy to prepare and came up with this.
My guys love abundant amounts of protein in their meals, especially the hubs, therefore I added turkey. It's light enough to balance the potato and pasta.

Like I mentioned above a traditional Pierogi is topped with onions and fried in butter. Instead I caramelized my onions in butter and added to the pasta.

Cabbage is a Pierogi filling per excellence but my guys are not too fond of it, so I switch to some savory broccoli for my veggie portion of the dish.

And of course cheese...it's not a casserole in this house if it's not oozing cheese. Sharp Cheddar was my choice.

Put it in the oven once put together and 45 minutes later enjoy a slice of happiness! Oh...let's not forget the sour cream and for a pretty touch, some chives! Yum!

Easy Pierogi Turkey Casserole
Ingredients:
12 ounces Campanelle (short pasta that resembles lasagna)












1 Large Onion, sliced
3 TBSP Butter
3-4 Cups Mashed Potatoes 
1 bag (12 ounces) broccoli florets with or without cheese your choice
2 Cups Sharp Cheddar Cheese, shredded
1Ppound (about 2 Cups) Hickory Smoked Turkey, diced
1 Can broccoli soup
1/2 Cup Chicken Broth
Salt, Pepper to taste
Sour Cream
Chives
Directions:
Heat your oven at 375 Degrees
Cook pasta according to instructions. Drain and set aside.
In a large skillet add butter and onions together and cook for about 8 minutes until onions are caramelized. Mix these caramelized onions with the pasta.
In a 9 x 13 baking pan add 1/2 of the mashed potatoes, flatten with a fork until you get an even surface. Layer 1/2 of the pasta/onion mix. Layer 1/2 of the diced turkey, 1/2 of the contents of the broccoli bag and 1 cup of cheese. Repeat this steps. Note :( For this second layer if you don't have enough of one ingredient, don't worry because at the end it will all bake together).
Once you get your last layer, add the soup mixed with the chicken broth. Cover with aluminum foil and bake covered for 30 minutes. Uncovered the casserole and let it bake for another 10 minutes. Grab a fork and enjoy!


Prep Time 20 minutes           Cook Time 40 minutes                Serves 8

Easy Ravioli Lasagna Recipe

EAsy Ravioli Lasgana, no time to cook noodles, no problem use frozen ravioli and have the ultimate lasagna in no time. It's delicious and you can customize it by changing the flavors of the ravioli! Yum!
Hola Amigos! Once in a while we all deserve a break from the kitchen, take a few shortcuts but at the same achieve great and delicious results. This is that kind of recipe. Using frozen ravioli of any kind you would be able to create this lasagna in no time and great taste. 
It freezes wonderfully so you will probably want to  bake 2 and freeze 1 for another lazy day.
You put together your lasagna the same way you would a regular one.  Cover it up, bake and enjoy!



You know you have done a great job when you can cut your lasagna and see all the layers you carefully put together come out so pretty!
Easy Ravioli Lasagna when you have no time to cook use frozen ravioli to make it! Customize it your way by changing the flavors of the ravioli! Delicious, Fast the perfect Freezer Meal

No one can complain there is not enough cheese on this lasagna! Add more veggies to yours by using spinach raviolis instead. Delicious!


Serve it with garlic bread or a green salad. This one is a main dish in itself

Ravioli Lasagna Recipe
Ingredients
1 Pound Ground Beef
1 Jar (28 oz) You Favorite Spaghetti Sauce
1 1/2 Package (250z) Frozen Ravioli Cheese, Beef, Spinach, your choice
1  Cup Bechamel Sauce
1 (8oz ) Can Sliced Mushrooms (optional)
1 1/2 Cup Shredded Italian Cheese
Directions
In a large pan, over medium heat, brown beef until no longer pink. Add Spaghetti Sauce and season if necessary. 
Using a 9"x13" lasagna baking dish, layer a 1/3 of the beef sauce, half of the ravioli (frozen or cooked), bechamel sauce, mushrooms and half of the mix of Italian Cheeses. Repeat 1 more layer of ravioli, beef sauce and finish with the rest of the cheese.
Cover and bake in a 365 F oven for 40-45 minutes or until heated up.

Prep Time 30 minutes   Cooking Time 40-45 minutes  Servings 6-8 

Easy Ravioli Lasgna, Easy and quick meal with only a few ingredients but pack with flavor. Change the raviolis to cheese, beef, spinach and have a different meal every time. Perfect Freezer Meal

Cheesy Rice Hominy and Chicken Casserole Recipe

Cheesy Rice Hominy and Chicken Casserole, an easy and fast recipe for those days you need to feed your entire family but you don't feel like spending all day in the kitchen,, just bake it and serve! Bake 2 and freeze 1!!! Perfect!
Hola Amigos! Happy Weekend! It's been a while since we have a quicky  Friday. In case you have forgotten quicky Fridays are all about recipes you can make for the whole family in less than an hour!
This one is pretty simple and of all places I found it on the  back of a can of soup.
I usually do not keep or have can soups in the house, not that there's nothing wrong with them, but for some reason every time I have one I end up chewing on a couple of anti-acids! Yeah I know..yucks...so to avoid that I don't have any. This time it seemed to me that due to the other ingredients it wouldn't be too bad so I gave it a try. This is my version of the canned soup recipe...I changed it a little to fit my taste but it's basically the same thing!
Cheesy Rice Hominy and Chicken Casserole
Cheesy Rice Hominy and Chicken Casserole, a cheese earthy chicken dish done in less than an hour in your oven, will make your family happy. Easy and fast recipe!.Bake 2 and freeze1!!1 Freezes well!

1 Pound Chicken Thighs
1 Cup White Rice
1 Can (15,5 oz) Hominy
1 Can (10 oz 3/4)  Cheddar Cheese Soup
1 Can Chicken Broth
1/3 of the Hominy Water
1 Cup Shredded Cheddar Cheese
 Heat up your oven at  375 F. The next step is totally optional, I like my chicken browned. So instead of just putting the chicken in the baking dish, I've previously seasoned it and browned it. This again is totally optional and the results I'm pretty sure are the same without this step. 
In a baking dish distribute the cup of rice, Place your chicken on top, Add the hominy. 
In a separate mixing bowl, mix soup, chicken broth and hominy water. Pour this mix on top of the chicken rice and hominy baking dish preparation. 

Cover with aluminum foil and bake for 50 minutes or until the rice is soft and chicken is thoroughly cooked. 
Remove from the oven and sprinkle the cup of cheese. Let it settle for 10 minutes and enjoy!
