With St. Patrick's approaching soon...maybe a little bit of green Leprechaun magic is in order, so how about some green M&M's quick coconut squares. Here is the recipe:
Green M&M's Quick Coconut Squares
2 Cups Chocolate Cookie Crumbs
6 Tablespoons Butter
1 Can Condensed Milk
2 Cups Shredded Coconut
1 1/2 Cup M&M's (mine plain chocolate and green)
Butterscotch Chips (optional)
Grease a 13x9 baking pan and heat the oven at 350 degrees. In a bowl mix the cookie crumbs with the butter, Press this mix onto the baking pan firmly until you have an even crust. Pour the condensed milk and spread with a spatula. Mix the M&M's with the coconut (and butterscotch chips) and spread this mix on top of the condensed milk. Put in the oven for 25 to 30 minutes. Let it cool and cut it in squares.

These cook so quickly you can make a batch in no time and enjoy some crunchy sweet coconut with a hint of chocolate!
I think they taste like the Almond Joy candies...but no Almonds...just Joy!
