Black and Blue Burgers with Pimento Dressing Recipe

Hola Amigos! Hope all mothers out there had a great Mother's Day weekend!. Mine was blessed with my kids, husband and a visit to my mother in law! Sweet lady I love deeply. My mom lives overseas with the rest of my family so I got to talk on the phone with her!

Getting back on track with cooking, let me introduce you my son the Grill Master! This Handsome young man (yeah...I have bragging rights here) is my oldest son and He really LOVES to grill.


I guess he got it from his Grandfather, who just got a brand new grill for Xmas last year and his uncle (my brother) who loves grilling everything he comes across!. Today's dish is courtesy on my oldest and his grilling abilities.

Black and Blue Burgers

1 1/2 Ground Black Angus
3/4 Cup Blue Cheese
4 oz Bacon Crisp and crumbled
1 large onion caramelized 
1 1/2 Pound Baby Spinach
Salt & Pepper to taste

Mix all these ingredients and you will get 6 good size patties. Don't be alarmed to see big leaves of spinach in your burger, they will pretty much disappear as soon as you grill them!  Grill them to your liking and serve in an onion bun with the Pimento Dressing if you like!


Pimento Dressing
1/2 Cup Mayonnaise 
3TBPS Pimento
1/4 Cup Blue Cheese Crumbled
1 TBSP ketchup
1 TSPS Hot sauce
Mix it all together and serve with your burger!

They are delicious. Crispy in the outside and juice in the inside (my hibs likes them well done) , with bits of caramelized onions, crispy bacon and spinach!

The Pimento Dressing Kicks it up a notch with a tangy and hot flavor! You won't be asking for the ketchup!

Hope you enjoy my Big Boy's recipe and grilling, he was very excited to make his debut in mom's blog (well after a lot of convincing that is, LOL)

  1. You had me at the Black and Blue Burgers, but the Pimento Dressing put me over the top. I never would have thought to put my cheese, bacon and greens IN the burger. Delish.

  5. Thank your son for this recipe Lizy. I love anything that has spinach. Will probably leave the onion out as it doesn't like me. One of my favorite local restaurant burgers has pimento cheese and it is really yummy. Happy belated Mother's Day! Your friend, Janet

  10. Sounds and looks divine! Never heard of putting spinach in a burger, does it help keep it moist? Interesting burger sauce too, I vote for bleu cheese in everything!
