This one is pretty simple and of all places I found it on the back of a can of soup.
I usually do not keep or have can soups in the house, not that there's nothing wrong with them, but for some reason every time I have one I end up chewing on a couple of anti-acids! Yeah I know..yucks...so to avoid that I don't have any. This time it seemed to me that due to the other ingredients it wouldn't be too bad so I gave it a try. This is my version of the canned soup recipe...I changed it a little to fit my taste but it's basically the same thing!
Cheesy Rice Hominy and Chicken Casserole
1 Pound Chicken Thighs
1 Cup White Rice
1 Can (15,5 oz) Hominy
1 Can (10 oz 3/4) Cheddar Cheese Soup
1 Can Chicken Broth
1/3 of the Hominy Water
1 Cup Shredded Cheddar Cheese
Heat up your oven at 375 F. The next step is totally optional, I like my chicken browned. So instead of just putting the chicken in the baking dish, I've previously seasoned it and browned it. This again is totally optional and the results I'm pretty sure are the same without this step.
In a baking dish distribute the cup of rice, Place your chicken on top, Add the hominy.
In a separate mixing bowl, mix soup, chicken broth and hominy water. Pour this mix on top of the chicken rice and hominy baking dish preparation.
Cover with aluminum foil and bake for 50 minutes or until the rice is soft and chicken is thoroughly cooked.
Remove from the oven and sprinkle the cup of cheese. Let it settle for 10 minutes and enjoy!
Serves 4
Listo
It is good, cheesy (the best part) and a meal in one, just the way I like it!
I love the earthy taste of the hominy, such an unappreciated grain! Not anymore!
You can add all can of veggies to make it fit your family's taste, and why not Bake 2 and Freeze 1!!! This recipe freezes well!
Thank You for stopping by today! Wishing you all a fun weekend...just keep in mind always my friends,
than everything tastes better, with a Pinch of Love!

Hi Lizy, I have never made or had hominy. Should I get brave? lol maybe this fall when I heat up my oven. Hope your having a great week!xo Theresa @DearCreatives
ReplyDeleteI have never had hominy. But this looks so delicious so I will add to my list to try.
ReplyDeleteThis looks scrumptious! But of course, with your photography skills, you could make us salivate over an old shoe covered in a wallpaper paste sauce!
ReplyDeleteI agree with you about canned soup, however for the really quick meals that there is no escape route for, they do pack all the flavor you need sometimes! This recipe sure looks like one of those times!
I love cooking with chicken thighs, they are so much more tender than breast and have a great taste! This looks like something my family would love :)
ReplyDeleteThis casserole sounds delicious! I have never had hominy either..but it sounds good!
ReplyDeleteThis sounds scrumptious! I hadn't thought of hominy for a while. I love casseroles.
ReplyDeleteWishes for tasty dishes,

Lizy this sounds delicious, although I have never tried hominy. I might just have to make this recipe so that I can see what it is like. Thanks for sharing on Foodie Friend Friday.
ReplyDeleteWe've never tried hominy before, but what tastes bad when smothered with cheddar cheese? Yum! I love your blog. I am not a big cook, but I am trying to improve and vary our meals! Your recipes look like a great place to start!
ReplyDeleteThanks so much for your visit and king comment!! Everything always looks so yummy here!!

I would have to scale back on the cheese as my husband would call it "too cheesy" but I would love it. Looks and sounds good. Thanks for linking up at Swap N Share Sunday.

This looks so cheesy and good! And it reminds me of my dad who loves hominy. Thanks for linking with See Ya in the Gumbo this week!
ReplyDeleteI've never cooked with hominy! This looks like a good place to start, though. I'm drooling... also your watermark is funny, I feel like it's telling me to dip the dish in chocolate ;)

ReplyDeleteI've never met anyone else who liked hominy (except my mom). I liked you tons before, now I like you even more. :) :) :)
